Hummus Avocado (HA!) toast.
Avocado toast with an international twist: hummus serving as a fiber-protein-packed base layer. This hearty breakfast is my go-to fuel when I’m bouncing from yoga studio to sales.
Ingredients:
2 slices GF bread (I’m currently using Little Northern Bakehouse), toasted
2 Tbs hummus, divided each slice of toast
1 ripe avocado, halved and thinly sliced
1 generous handful micro greens, divided each slice of toast
2 Tbs salted, roasted sunflower seeds
1 Tbs hemp seeds
1 lemon, halved
1 tsp chili flakes, or more per liking
1-3 tsp himalayan sea salt
Instructions:
Spread hummus on both slices of bread. Fan thinly sliced avocado across both pieces of toast. Sprinkle with micro greens and seeds.
Just before consuming, squeeze fresh lemon, chili flakes and salt to liking and enjoy.
Serving Suggestion: Use Gluten-Free or Dave’s Killer Bread.
